Glazed Carrot Recipe

This was a tasty recipe by Tricia McTamaney. Its just a quick and dirty recipe that you can toss on a bag of baby carrots and have a delicious appetizer slash side in about 15 minutes. No muss no fuss.

8 Servings

Ingredients

2 pounds carrots, peeled and cut into sticks
1/4 cup butter
1/4 cup packed brown sugar
1/4 teaspoon salt
1/8 teaspoon ground white pepper

Directions

Place carrots into a large saucepan, pour in enough water to reach depth of 1 inch, and bring to a boil. Reduce heat to low, cover, and simmer carrots until tender, 8 to 10 minutes. Drain and transfer to a bowl.

Melt butter in the same saucepan; stir brown sugar, salt, and white pepper into butter until brown sugar and salt have dissolved. Transfer carrots into brown sugar sauce; cook and stir until carrots are glazed with sauce, about 5 more minutes.

Bossanova Baked Flounder Fillets in Lime-Soy Vinaigrette

This recipe was one of the most delicious baked fish recipes that I have ever had. I highly recommend it. I cooked half of my bag of flounder filets like this and the other half in lemon pepper butter. Believe you me, I wish I had done the whole fish in this because it was succulent. I cant wait until i can afford more flounder. I am also thinking about using this as a marinade for chicken.

Bossanova Baked Flounder Fillets in Lime-Soy Vinaigrette

Ingredients

  • two 6-ounce flounder fillets
  • 1 garlic clove
  • 2 tablespoons fresh lime juice
  • 2 teaspoons soy sauce
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil

Directions

Preheat oven to 450°F.
Arrange fillets in a ceramic or glass baking dish just large enough to hold them in one layer. Mince garlic and in a small bowl combine with lemon juice, soy sauce, sugar, and salt. Whisk in oil until emulsified and pour vinaigrette over fish.
Bake fish in middle of oven until just cooked through and no longer translucent, 5 to 7 minutes.
The original recipe called for Juice but all I had was lime. I have tried both

RAWr Cinnamon Apple Zap Balls

This next recipe comes from Brianne over at Cupcakes and Kale Chips. Its a pretty cool site that I stumbled upon a while back. All credit to the recipe goes to her. I am posting it here because I am going to add it to my Apple Days Cookathon (which isn't a thing yet but it will be) and I don't want to lose track of it. When I cook I like to multitask and get as much stuff as I can for the time allotted. I don't know quite where I am going with it yet but the wire-crossed genius (not really) of my brain will put it together eventually.

Plus I will eventually hack n mod this recipe into something of my own hopefully. I already have a few ideas. I will let you know when I cook it how things go but I feel comfortable posting it in Impossible land cause I like all the ingredients. No way this thing turns out bad.

How to Make Cinnamon Apple Zap Balls

Ingredients

½ cup pitted dates
1 cup dried or dehydrated apples (not apple chips)
½ cup uncooked oats
½ teaspoon cinnamon

Directions

1. Combine all of the ingredients in a food processor and process until it forms a thick paste.
2. Using about a tablespoon of the mixture, roll into balls. If you want the little bites, use about ¼ teaspoon.

Cooltino Cinnamon Tortilla Chips

Here is a very tasty Cinnamon Chip recipe that my wife absolutely loves. This recipe was the basis for my delicious Cinnasugar Recipe that literally revolutionized our kitchen. Okay I will add some more blah blah blah later. For now, I got to get cooking and I hope you enjoy this recipe.

Ingredients:

2 tablespoons white sugar
2 tablespoons cinnamon
10 (10 inch) flour tortillas
butter cooking spray or coat with butter

Directions

1. Preheat oven to 350 degrees F (175 degrees C)

2. Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges (pizza cutter works great for this) and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.

3. Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes.

4. Eat...you can dip it into fruit preserves for like a chips n salsa effect but we do not usually bother. They taste find by themselves.

Impossibly Cowabunga Chicken Broth Recipe

This is quite honestly the best broth that I have ever had. I still have some tweaking to do before I put it on Yummly but it is really starting to come together. I am sorry I don't have exact measurements on everything just yet. The next time I make it, I am going to try and measure everything out. If you like homemade broth (it tastes great with homemade egg noodles) then please check this recipe out and let me know if you have any input or if something sucks. I can take it.

Impossibly Cowabunga Chicken Broth Recipe

Ingredients

Chicken with Bone in (legs work the best)
1 cup dehydrated celery plus 1 quart bag of celery remnants.
1 lb of carrots or carrot remnants
1/2 quart ziploc full of dehydrated leeks
1 sprig of dehydrated Rosemary
1 1/2 onions chopped
Onion Skins for Color
1 tablespoon Celtic Sea Salt
10-20 Peppercorns according to your taste
2 bay leaves
1/2 cup fresh parsley
1 bunch of Parsley Stems*

Directions

Combine all Ingredients and cover with water. bring to a boil and then low simmer until chicken is done. Pull chicken off bone. Crack bones with a monkey wrench and put the bones back into the broth/stock. Add more water if necessary and then Simmer the broth on low to your desired taste. Strain the broth, refrigerate overnight and then skim fat off the top. (I will clean up these directions more ASAP)

*Parsley Stems have the most flavor compared to the leaves. And they are perfectly safe to eat. They have to much taste to just nibble on but they are great for broths so no need to throw them away.

Microblogging is dead imho. I figure if it helps anyone else great if not at least I don't have to worry about losing a cookbook. 1 cup Water
1/2 teaspoon ground Cinnamon
1/4 cup White Sugar
1/4 cup Brown Sugar
1/2 teaspoon salt

My wife is an expert on chicken noodle soup and she loved it. It's not as good as her's of course but maybe I can talk her into sharing the recipe here with you. I will write more on it when the arthritis in my fingers wears off a bit. I clocked 120 wpm back in college and now I am lucky to pull 10 wpm. Winter suxors. This recipe makes approximately 4 quarts and you should still have plenty of Turkey Stock left over depending on how strong you like your soup.

How to Make my Accidentally Delicious Turkey Stock

Turkey Stock Makes Great Chicken Noodle Soup (Recipe)

With Thanksgiving on its way. Everyone will soon be scrambling around to find the perfect Turkey. Thanksgiving is a day to be thankful. We are thankful for are families, delicious food and the Native people (don't call them Native Americans it's offensive)  who were kind enough to share their food with us and thus prevent our subsequent starvation. And of course, the Turkeys (the living) all over America will celebrate and be thankful that they survived another Turkey Day Holocaust.

As you are enjoy the Tryptophan induced coma your wife is probably in the Kitchen throwing away the ravaged remains of the Thanksgiving Turkey. But Don't do that. You are throwing away a valuable resource. You can use that carcass to make a delicious Turkey Stock that will make what my wife called a near perfect Chicken Noodle Soup. Now of course I achieved this feat of greatness (in my own mind) not be being perfect. I couldn't do anything perfect if my life depending on it. As usual it was an accident (doh!-licious). Here is the recipe

How to Make Delicious Turkey Stock

Ingredients:

Turkey Bones
*1/2 quart of Carrot Tops (not the greens just the nubs  you usually don't eat)
Two large handfuls of fresh chopped or dehydrated leaks
3 or 4 regular sized celery stalks chopped
half a jar of dehydrated or fresh chopped onions.
handful of fresh or dehydrated parsley flakes
7 or 8 Dried Sage Leaves
1 large sprig of rosemary
A couple large shakes of Thyme
1 Tablespoon Celery Powder
1 Monkey Wrench to Crack the Turkey Bones

Directions:

1. Put all the ingredients in a large pot.
2. Fill the pot with water to just about an inch over the ingredients.
3. Simmer (1 or 2 bubbles a minute) until all the meat starts to fall of the turkey.
4. Remove the Turkey Bones Take the meat off the bones and throw away (or add to your collection of leftovers)
5. Crack the bones with your monkey wrench and toss them back into the pot.
6. Simmer until it is concentrated to the desired taste.
7. Strain through a fine mesh strainer when it tastes good.
8. Pour into containers and refrigerate overnight.
9. Skim the congealed fat (if any) off the top of container and freeze until ready.

Notes:

Some people have complained that this method makes the broth cloudy but I didn't notice. It tastes delicious that is the only thing that is important to me. You can use this Turkey Stock to make a delicious Chicken Noodle Soup. I will post the recipe below when I type it up.  Here is the recipe I started with to make Turkey Stock but I experimented with it and its totally(well, not totally)  different  now.

*I save the top and bottom pieces that I cut off the carrots to use for Broths. If you want you can just put carrots in there instead. But I am broke as a joke so I have try and reuse everything I can.

Impossibly Improved Apple Chip Recipe

How to Make the Best Apple Chips in the World

Here is a recipe that will make some of the best Apple Chips in the world. The true secret to the recipe is to use a Mandolin Slicer and (some vitally important protective gloves) to make your apples razor thin. If you don't have one of those then you will just have to do your best to cut them up very very thinly. And there are still a couple differences between my Impossible Recipe and your regular apple chip recipe.

It took me a month of failure to produce something that was better than store bought. It turns out that the main problem was simply the thickness of the apples. I bought the mandolin on a whim...sliced up the apples and voila! Better than store bought. The best I have ever had.

Ingredients

2 Granny Smith Apples
2 parts Cinnamon powder
2 parts White Sugar
1 part Brown Sugar

Directions

Preheat Oven to 200 Degrees Fahrenheit.

1. Slice the apples as (razor thin as possible. You can soak the slices in a bowl of ice, water and the 2 T lemon juice for 5 minutes to prevent discoloration but I find this step to be unnecessary. Peeling the apples is optional but I don't bother. They taste great peel and all. Its so thin that you really do not notice the peel.

2. Mix up remaining ingredients. You can put them into a shaker like this one to help yourself evenly disperse the Cinnasugar mixture but it's okay if you don't have one. Just improvise. You can do it.

3. Place apples on parchment paper and sprinkle a generous portion of the Cinnasugar mixture onto the apples.

4. Bake at 200 degrees for approximately 90 minutes - 2 hours. Apples will crisp-en after taking them out of the oven. Don't worry if they aren't crispy immediately. Wait about 4 minutes if they aren't crispy enough for you then bake them for another 15 minutes. Getting the slices razor thin is the key to success.
