Glazed Carrot Recipe

This was a tasty recipe by Tricia McTamaney. Its just a quick and dirty recipe that you can toss on a bag of baby carrots and have a delicious appetizer slash side in about 15 minutes. No muss no fuss. 

8 Servings

Ingredients



2 pounds carrots, peeled and cut into sticks
1/4 cup butter
1/4 cup packed brown sugar
1/4 teaspoon salt
1/8 teaspoon ground white pepper



Directions



Place carrots into a large saucepan, pour in enough water to reach depth of 1 inch, and bring to a boil. Reduce heat to low, cover, and simmer carrots until tender, 8 to 10 minutes. Drain and transfer to a bowl.


Melt butter in the same saucepan; stir brown sugar, salt, and white pepper into butter until brown sugar and salt have dissolved. Transfer carrots into brown sugar sauce; cook and stir until carrots are glazed with sauce, about 5 more minutes.

Bossanova Baked Flounder Fillets in Lime-Soy Vinaigrette

This recipe was one of the most delicious baked fish recipes that I have ever had. I highly recommend it. I cooked half of my bag of flounder filets like this and the other half in lemon pepper butter. Believe you me, I wish I had done the whole fish in this because it was succulent. I cant wait until i can afford more flounder. I am also thinking about using this as a marinade for chicken.  



Bossanova Baked Flounder Fillets in Lime-Soy Vinaigrette

Ingredients

  • two 6-ounce flounder fillets
  • 1 garlic clove
  • 2 tablespoons fresh lime juice
  • 2 teaspoons soy sauce
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil


Directions


Preheat oven to 450°F.
Arrange fillets in a ceramic or glass baking dish just large enough to hold them in one layer. Mince garlic and in a small bowl combine with lemon juice, soy sauce, sugar, and salt. Whisk in oil until emulsified and pour vinaigrette over fish.
Bake fish in middle of oven until just cooked through and no longer translucent, 5 to 7 minutes.
The original recipe called for Juice but all I had was lime. I have tried both 

Honey Lime Ginger Carrots with Nutmeg and Cilantro

Here is an original Recipe created by Me. Its got alot of tang and flavor so I can't promise that you will like it. My wife and I loved it. If any of the five of you who read this blog try it and have suggestions or improvements, Id love it lol.

Honey Lime Ginger Carrots with Nutmeg and Cilantro

Ingredients


1 pound carrots, sliced
1/4 cup butter
2 1/2 tablespoons honey
1 pinch ground ginger
1 tablespoon lime juice, or to taste
1/4 cup of Cilantro (chopped up)
Tiny pinch of nutmeg (the stuff is strong)

Directions


1. Bring a pot of water to a boil. Add carrots and cook until tender but still firm, about 5 minutes. Drain.

2. In a large skillet over low heat, melt butter with honey. Stir in ground ginger, lemon juice. Then stir in the carrots and simmer until heated through. About a couple minutes before the carrots are done, add the chopped cilantro and stir then when the butter is reduced down and its heated you can serve.

RAWr Cinnamon Apple Zap Balls

This next recipe comes from Brianne over at Cupcakes and Kale Chips. Its a pretty cool site that I stumbled upon a while back. All credit to the recipe goes to her. I am posting it here because I am going to add it to my Apple Days Cookathon (which isn't a thing yet but it will be) and I don't want to lose track of it. When I cook I like to multitask and get as much stuff as I can for the time allotted. I don't know quite where I am going with it yet but the wire-crossed genius (not really) of my brain will put it together eventually. 

Plus I will eventually hack n mod this recipe into something of my own hopefully. I already have a few ideas. I will let you know when I cook it how things go but I feel comfortable posting it in Impossible land cause I like all the ingredients. No way this thing turns out bad. 


How to Make Cinnamon Apple Zap Balls


Ingredients


½ cup pitted dates
1 cup dried or dehydrated apples (not apple chips)
½ cup uncooked oats
½ teaspoon cinnamon


Directions


1. Combine all of the ingredients in a food processor and process until it forms a thick paste.
2. Using about a tablespoon of the mixture, roll into balls. If you want the little bites, use about ¼ teaspoon.

Cooltino Cinnamon Tortilla Chips

Here is a very tasty Cinnamon Chip recipe that my wife absolutely loves. This recipe was the basis for my delicious Cinnasugar Recipe that literally revolutionized our kitchen. Okay I will add some more blah blah blah later. For now, I got to get cooking and I hope you enjoy this recipe.

Ingredients:


2 tablespoons white sugar
2 tablespoons cinnamon
10 (10 inch) flour tortillas
butter cooking spray or coat with butter


Directions


1. Preheat oven to 350 degrees F (175 degrees C)

2. Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges (pizza cutter works great for this) and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.

3. Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes.

4. Eat...you can dip it into fruit preserves for like a chips n salsa effect but we do not usually bother. They taste find by themselves.

Simple Roasted Cauliflower Recipe (Roasted Cauliflower Fail Part 1)

Simple Roasted Cauliflower Recipe

Ingredients


1/4 Cup Olive Oil
Cauliflower
Dash Sea Salt
Dash Pepper

Directions


Preheat Oven to 400 degrees F

Toss ingredients together and Roast in a Large Baking Dish for 20 Minutes.

Impossibly Cowabunga Chicken Broth Recipe

This is quite honestly the best broth that I have ever had. I still have some tweaking to do before I put it on Yummly but it is really starting to come together. I am sorry I don't have exact measurements on everything just yet. The next time I make it, I am going to try and measure everything out. If you like homemade broth (it tastes great with homemade egg noodles) then please check this recipe out and let me know if you have any input or if something sucks. I can take it. 



Impossibly Cowabunga Chicken Broth Recipe

Ingredients


Chicken with Bone in (legs work the best)
1 cup dehydrated celery plus 1 quart bag of celery remnants.  
1 lb of carrots or carrot remnants
1/2 quart ziploc full of dehydrated leeks
1 sprig of dehydrated Rosemary
1 1/2 onions chopped
Onion Skins for Color
1 tablespoon Celtic Sea Salt
10-20 Peppercorns according to your taste
2 bay leaves
1/2 cup fresh parsley
1 bunch of Parsley Stems* 


Directions


Combine all Ingredients and cover with water. bring to a boil and then low simmer until chicken is done. Pull chicken off bone. Crack bones with a monkey wrench and put the bones back into the broth/stock. Add more water if necessary and then Simmer the broth on low to your desired taste. Strain the broth, refrigerate overnight and then skim fat off the top. (I will clean up these directions more ASAP)

*Parsley Stems have the most flavor compared to the leaves. And they are perfectly safe to eat. They have to much taste to just nibble on but they are great for broths so no need to throw them away.
